Cowboy Chili and Chill

It’s freezing outside. Here is my current favorite easy recipe because let’s be real it takes forever to get these kids in and out of all of these snow clothes and I just want to goof off.

Cowboy Chili Recipe

Ingredients

  • 1 pound stew beef, cubed

  • 1 can of tomatoes (roasted or plain)

  • 1 can of corn

  • 1 can of chili beans

  • 1 can of black beans

  • Texas Pete hot sauce, to taste

  • 1/4 cup brown sugar

  • Sour cream, for serving

  • Shredded cheddar cheese, for serving

  • Corn chips, for serving

Instructions

  1. In a crock pot or Dutch oven, cook the cubed stew beef over medium-high heat until browned on all sides, about 5-7 minutes.

  2. Add the can of tomatoes, the corn, chili beans, black beans, and brown sugar to the pot. Stir to combine. Salt and Peper

  3. Reduce the heat to low and let the chili simmer for normal amount of time for your slow cooker a few hours, or until the beef is tender and the flavors have melded together.

  4. Season to taste with Texas Pete hot sauce.

  5. Serve the Cowboy Chili hot, garnished with a dollop of sour cream, a sprinkle of shredded cheddar cheese, and a handful of corn chips on top.
